MINT SUGAR Put four to six mint leaves and a cup of sugar in the blender. Add a few drops of green food colouring. Blend on high until well mixed. Dry the sugar overnight on a cookie sheet before storing for later use on cookies and grapefruit and in tea. Or for an attractive, delicious garnish, roll little green grapes in this sugar. VANILLA SUGAR Place one or two vanilla beans into a canister full of sugar and allow the vanilla flavour to permeate the contents for about two weeks. Stir occasionally. You will get faster results if the bean is cut into pieces and then sifted out. You can use the same technique with confectioners' sugar. The sugar will seem much sweeter then usual, so use less in recipes for puddings, chocolate sauces and so on. The same beans can be re-used to flavour many pounds of sugar. |
