A Salad for Fish Days

While the Puritans in England and New England did not follow a rule of feast and fast days as set by the Anglican and Roman Catholic Churches, many of the cookbooks used by the goodwives contained recipes for those days. These recipes came from a time when Wednesdays, Fridays, Saturdays and the 40 days of Lent allowed only dairy products, fish and eggs to be eaten. The English Government also passed laws for fish days to help bolster the growing fish economy.

leaf lettuce, endive, borage, watercress
edible flowers (sold in gourmet food shops)
1 lb periwinkles or clams
salt, pepper, oil and vinegar

Wash and dry greens, toss with flowers and place in a bowl or platter. Shell clams or periwinkles and toss into salad. Combine oil, vinegar, salt and pepper. Moisten salad with dressing.
