2 1/2 cups flour 1 cup firmly packed brown sugar 3 1/2 teaspoons baking powder 3 tablespoons oil 1 1/2 cups milk or 3/4 cup apple juice and 3/4 cup milk 1 egg 1 cup chopped walnuts 1 cup fresh mint (1/3 scant cup, dried) Preheat oven to 350° F. Mix the flour, sugar and baking powder in a large mixing bowl. Whisk together the oil, milk and egg. Blend the mixtures together. Add the walnuts and mint.
Bake in greased bread pans in the preheaded oven for 50 to 60 minutes. Cool and slice. Ages and freezes well.
