Candied Violet Libra

40 violets
2 drops almond extract
1 egg white, beaten frothy
1 tablespoon water
1/2 cup confectioners' sugar

Wash violets and drain. Do not attempt ot remove the green calyx. (Impossible!) Add extract to water and softly beaten egg white. Brush on violets, covering each flower well. Lay on wax paper. Sprinkle with powdered sugar, completely covering both sides. They can be dried in the open air in a week or two; in a sunny window in 2 or 3 days; in the oven at 200° F. for 20 to 30 minutes. Store in glass jars.

LIBRAN QUICKIES

Put a small dab of frozen dessert topping on 3 dozen vanilla wafers or small cookies. Garnish each with a candied violet. Elegant, easy, delicious and truly beautiful to serve.
